Fried Eggs with Feta Cheese and Snow Pea Sprouts

I’m not much of a planner when it comes to grocery shopping, so oftentimes I end up with a fridge full of random stuff. And then I’m hungry – this often happens at weird hours of the (mostly) night – and try all sorts of combinations. Same was the case with this recipe, I had made the mango salad with beef, red onion and coriander, for which I needed snow pea sprouts, and had some left in the fridge. I also had eggs and feta cheese. So I just made up this recipe and realised it’s super, super tasty. If you want to kick off your day on a savoury note, this is for you!

Ingredients for 1 Person

  • 2 Eggs
  • Extra Virgin Olive Oil
  • Handful of Snow Pea Sprouts
  • 100g Feta Cheese
  • 2-3 Teasp Green Pesto (Genovese)
  • Knäckebröd (optional)
  • Cracked Pepper

Method

Another one of my super simple recipes, all you have to do is chop some ingredients, fry some eggs and throw everything together.
Let’s start with the chopping. Cut the snow pea sprouts in three, cut the feta cheese in little cubes of 1.5-2cm. Place the feta cheese into a deep plate.
Now heat up 2-3 tablespoons of olive oil in a frying pan on maximum heat. Once the oil is hot, crack two eggs right next to each other into the pan and fry them sunny-side up, without a lid. Make sure the stove is on maximum heat and there is enough oil, so the underside of the egg becomes really crispy, while the yolk still stays partially fluid.
Take out the eggs and place them into the plate on top of the feta cheese. Grab two forks and pull the eggs apart into shreds. Sprinkle the snow pea sprouts on top, they will give the dish a nice earthy flavour.
Mix well. Add 2-3 teaspoons of green pesto as well as cracked pepper on top.
If you like, serve with knäckebröd (Swedish crispbread). It comes in different flavours, my favourite is the rye one. In Germany I used to buy the green package from Wasa, here in Australia I get it from Ikea, either the big round package, or the small black one, but always rye.
